Pineapple Casserole





This has to be my most requested dish ever!!  It is requested at church functions, family gatherings and Sunday dinners.  If you have ever tried a pineapple casserole then you know the pure joy of just one bite.  The following recipe is for a 9X13 and the picture above is 1/2 of that.  If I make one for supper I just make a small one.


Pineapple Casserole


2 cans crushed pineapple, drained (reserve the liquid)

8 T pineapple juice
1/3 cup flour
1 cup sugar
2 cups mild shredded cheese
1 roll of Ritz crackers, crushed
1 stick of butter, melted


Mix pineapple juice, flour and sugar together well.  Mix in crushed pineapple and shredded cheese.  Spread in a 9X13 dish.  Cover with crushed Ritz crackers and drizzle melted butter over top. Bake at 350 degrees for 30-40 minutes.
