Pumpkin Pie French Toast

 
 
 
Yes...I know...another pumpkin recipe!!  I must admit that I go a little crazy with the pumpkin in the fall.  I mean you only fix these types of recipe one time a year so I say go crazy with it.  It's kind of like the Pumpkin Spice Latte at Starbucks.  You order one the minute they start having them and then you can't stop!!  This recipe was quite a nice little surprise, especially since everyone in the house enjoyed it.  It has such a nice light pumpkin flavor and it is definitely a true fall recipe.  I hope you enjoy!!
 
 
 
Pumpkin Pie French Toast
 
 
4 eggs
1/2 c milk
1/2 cup pumpkin puree
2 tsp pumpkin pie spice
1 tsp cinnamon
4 T brown sugar
8-10 slices of hearty bread
 
 
Beat eggs and milk in a shallow bowl.  Whisk in pumpkin, brown sugar, pumpkin pie spice and cinnamon until well combined.  Be sure there are no clumps of pumpkin left.  Lightly coat griddle with butter.  Dip bread into egg mixture, turning to coat each side and allow excess to drip off.  Cook on medium to low heat until golden brown on each side.  Serve warm with syrup.
